Eggs baked in avocado

I can hear you already going what on earth is that?????





Well.....If words like “ egg avocado" make you think, “Ew, weird, clicking away now." Don’t–click away!




Avoiding things that sound weird will keep you from enjoying things that taste amazing.





So onto the recipe...

 

First things first
2 small eggs 

1 avocado, halved and pitted


1 pinch dried parsley, or to taste


1 pinch sea salt and ground black pepper to taste

                                                                                                                            





Second things steps..

Preheat oven  to 425 degrees 

Crack the eggs into a bowl, being careful to keep the yolks intact.

Arrange avocado halves in a baking dish, resting them along the edge so avocado won't tip over. 
Gently spoon 1 egg yolk into the avocado hole. Continue spooning egg white into the hole until full. 
Season each filled avocado
Gently place baking dish in the preheated oven and bake until eggs are cooked, about 15 minutes.

Whole wheat crepes with blueberry sauce

So onto the recipe...

 

First things first
* 3 eggs
* 1 cup whole-wheat flour
* 1 cup milk
* ¾ cup water
* 1 tablespoon honey
* 1 teaspoon vanilla
* ¼ teaspoon salt
* 1 tablespoon butter, melted + extra for cooking. 
                                                                                                                            Second things steps..
1. Put all ingredients in blender and mix well. Let stand about 15 minutes.
2. Melt and swirl around a small pat of butter in an 8 or 10-inch frying pan over medium heat.
3. Angle pan and pour enough batter on one side to thinly and evenly cover the pan. Very quickly swirl the batter around to cover the pan in one thin layer.
4. Immediately use your cooking spatula to push down the thin edges of the crepe around the perimeter.
5. After about 1 minute (and once it is golden brown on the bottom) carefully flip it over without tearing the crepe.
6. Fry for 1 more minute on the other side (until it is golden brown as well) and then roll up each crepe. 


(Blueberry sauce)
Ingredients:
* 2 cups fresh or frozen blueberries
* 1/2 cup water
* 1/2 cup granulated sugar
* 2 tablespoons fresh lemon juice
* 2 tablespoons cornstarch, mixed with 2 tablespoons cold water
* 1/2 teaspoon vanilla extract
* Zest of 1 lemon (about 1 tablespoon), optional

* In a medium saucepan over medium heat, combine the blueberries, 1/2 cup of water, sugar and lemon juice. Stir frequently, and bring to a low boil.
* In a small bowl, whisk the cornstarch with 2 tablespoons of cold water.
* Slowly stir the cornstarch into the blueberries, taking care not to crush the blueberries. Simmer until the homemade blueberry sauce is thick enough to coat the back of a metal spoon, about 5 minutes.
* Remove from heat and gently stir in vanilla and lemon zest.

Fish tacos with siracha honey sauce and orange cumin glaze

So onto the recipe...

 

First things first
1 pound tilapia filets cut into chunks 

Glaze
1/4 cup fresh lime juice

1/4 cup fresh lemon juice

3 tablespoons honey

1 tablespoon olive oil
1 teaspoon ground cumin
1 tbsp mandarin oranges juice oranges removed 

Sauce 

1/2 cup mayonnaise

2 tbsp siracha 

1/4 teaspoon salt

1/8 teaspoon cayenne pepper

Breading 

1/3 cup all-purpose flour
2 eggs, lightly beaten

2 cups bread crumbs

salt and ground black pepper to taste

1 cup vegetable oil for frying

1 cup minced fresh cilantro leaves


8 (7 inch) flour tortillas, warmed

Your choice of toppings 
Spring mix salad, tomato, olives

Apple spice cake

So onto the recipe...

 

First things first
* 2 & 1/4 cups all-purpose flour
* 1 & 1/2 teaspoons baking powder
* 1 teaspoon ground cinnamon
* 1/2 teaspoon salt
* 1/4 teaspoon ground nutmeg
* 1/4 teaspoon ground allspice
* 3/4 cup unsalted butter, softened
* 1 cup packed light brown sugar
* 1/2 cup granulated sugar
* 3 large eggs
* 2 teaspoons vanilla extract
* 1 cup milk
* 2 medium apples, finely chopped
                                     
                                                                                       Second things steps..
Preheat oven to 350°. Butter two 9-inch round cake pans.
Whisk together flour, baking powder, cinnamon, salt, nutmeg, and allspice. Set aside.
Using an electric mixer on medium speed, beat butter, brown sugar, and sugar until light and fluffy.
Add eggs, one at a time, mixing well after each addition. Mix in vanilla.
Add flour in 3 portions, alternating with 2 portions of milk. Mix just until combined. Stir in apples.
Divide batter between prepared pans and smooth evenly.
Bake 25 to 30 minutes, or until a pick inserted into the center comes out clean.
Cool in pans for 15 minutes. Then, move pans to wire racks, and allow to cool.

Feel free to frost or just attack viciously with fork. I used a lot of organic items. Heart healthy.

Sweet & Sour Orange Salad

So onto the recipe...

 

First things first
(Salad) 
Spring Mix Lettuce
Sliced green onions
Slivered cucumber
1 can mandarin oranges, well drained
Candied spices (ground ginger and nutmeg) almonds/pecans - optional



(Dressing)
1/4 cup olive oil
2 T sugar or agave syrup (low glycemic)
2 T vinegar
1 T tarragon
Freshly ground pepper
Dash of sriracha sauce



                                          
                                                     Second things steps..

Mix salad ingredients together in bowl 
Set aside 
Mix dressing ingredients together 
Mix into an in airtight container 
Blend/shake dressing well 
Add and mix dressing at time of serving

Parmesan baked potatoes

So onto the recipe...

 

First things first
4 Potatoes scrubbed not peeled 
4 tbsp olive oil
1/4 tsp garlic salt, parsley, Italian seasoning, pepper, paprika
4 tbsp Parmesan cheese 


Before

                                                                                          Second things steps..

Preheat oven to 450 
Set cookie sheet aside 
Wash potatoes and slice into rounds
Brush with oil 
Sprinkle seasonings on top of potato 
Place onto cookie sheet 
Bake 25 minutes 
Flipping potatoes after 12 minutes 
Once brown top with extra cheese

Slow cooker Cinnamon apples

So onto the recipe...

 

First things first
1 bag apples sliced
1 cup brown sugar
1 tsp nutmeg
1 tsp cinnamon 
1/2 cup cinnamon sugar 
1 1/2 cups water 
                                                                                                                     
Second things steps..

Using crock pot mix apples and all items together. 
Cook on low 4-5 hours until tender 
Drain juice and simmer in pot on high 
Pour over apples 
Serve
