Coated Walleye Crunchy Style

I can hear you already going what on earth is that?????





Well.....If words like “avocado ” make you think, “Ew, weird, clicking away now." Don’t–click away!




Avoiding things that sound weird will keep you from enjoying things that taste amazing.





So onto the recipe...

 

First things first

1/3 cup flour
1 tsp paprika
1/2 tsp salt
1/4 tsp pepper
1/4 tsp garlic powder
3 whole eggs
3 pounds walleye fillets ( can also use perch or pike fillets)
2 cups mashed potato flakes( I used white cheddar flavored ones)
1/3 cup vegetable oil

  1. In a shallow bowl, combine flour, paprika, salt, pepper, onion powder and garlic powder. In another bowl, beat the eggs. Dip both sides of fillets in flour mixture and eggs, then coat with potato flakes.
  2. In a large skillet, fry fillets in oil for 5 minutes on each side or until fish flakes easily with a fork. Serve with tartar sauce and lemon if desired. Yield: 4 servings.

Southwest Salad

So onto the recipe...

 

First things first

3 heads lettuce torn
1 cucumber sliced thin
1 avocado peeled and sliced
1 red onion sliced and cut into rings
11 oz can mandarin ornages drained

SALAD DRESSING
1/2 tsp grated orange peel
1/4 cup orange juice
1/2 cup canola oil
2 tbsp sugar
3 tbsp red wine vinegar
1 tbsp lemon juice
1/4 tsp salt
 
 
 






                                                                                                                                                             Second things steps...
In a small bowl, whisk salad dressing ingredients; set aside. Arrange the lettuce, cucumber, avocado, onion and oranges on individual plates. Drizzle with dressing just before serving. Yield: 6 servings.

4 whole avocados diced
1 cup minced scallions
1/2 cup chopped fresh cilantro
1 tsp salt and pepper
1 tsp lime juice

  Combine avocado, scallions, and cilantro; season with salt and lime juice. Mix and enjoy

Mini Chocolate Cheesecakes

So onto the recipe...

 

First things first

24 miniature gingersnap cookies
8 oz cream cheese 
1/2 cup sugar
1/2 cup chocolate chips
1 tsp vanilla
1 whole egg
1/2 cup heavy whipping cream
4 tsp powdered sugar
 





                                                                                                                                                             Second things steps...
  1. Place wafers flat side down in paper-lined miniature muffin cups; set aside.
  2. In a small bowl, beat cream cheese and sugar substitute until smooth. Add chocolate chips and vanilla; mix well. Add egg; beat on low speed just until combined. Spoon about 1 tablespoon into each cup.
  3. Bake at 350° for 10-12 minutes or just until set. Cool completely on a wire rack. Cover and refrigerate for 1 hour.
  4. In a small bowl, beat cream until it begins to thicken. Add confectioners' sugar; beat until stiff peaks form. Top cheesecakes with whipped cream mixture; garnish with chocolate curls if desired. Yield: 2 dozen

Cream Filled Strawberries

First things first

18 large strawberries
1 cup milk
1 oz pkg vanilla pudding mix
2 cups cool whip
 


 



                                                                                                                                                                Second things steps...
 
 Remove stems from strawberries; cut a deep X in the top of each berry. Spread berries apart.In a large bowl, whisk milk and pudding mix for 2 minutes. Fold in whipped topping and Pipe or spoon about 5 teaspoons into each berry. Chill until serving. Yield: 18 strawberries.

Neopolitan Fudge

First things first

1 1/2 tsp butter
8 oz cream cheese softened
3 cups powdered sugar
16 oz white chocolate chips melted

VANILLA LAYER
8 oz cream cheese softened
3 cups powdered sugar
16 oz white chocolate chips melted
1 tbsp vanilla 

RASPBERRY LAYER
8 oz cream cheese softened
3 cups powdered sugar
16 oz white chocolate chips melted
1 tbsp raspberry extract
10 drops red food coloring

  1. Line a 13-in. x 9-in. baking pan with foil and grease the foil with butter; set aside. In a large bowl, beat cream cheese until fluffy. Gradually beat in confectioners' sugar. Beat in the melted milk chocolate. Spread into prepared pan. Refrigerate for 10 minutes.
  2. For vanilla layer, in a large bowl beat cream cheese until fluffy. Gradually beat in confectioners' sugar. Beat in melted white chocolate and vanilla. Spread over chocolate layer. Refrigerate for 10 minutes.
  3. For raspberry layer, in a large bowl beat cream cheese until fluffy. Gradually beat in the confectioners' sugar. Beat in melted white chocolate and raspberry extract. Tint with food coloring if desired. Spread over top. Cover and refrigerate for at least 8 hours or overnight.
  4. Using foil, lift fudge out of pan. Gently peel off foil; cut fudge into 1-in. squares. Store in an airtight container in the refrigerator. Yield: about 6-1/2 pounds.
