Calla Lilly Sandwiches

So onto the recipe...

 

First things first

1 slice bread
8 oz cream cheese
2 tbsp chives
1 tbsp dill
1 dash salt and pepper
1 dash paprika
1 bunch match stick carrots
1 bunch green onions



 

 



                                                                                                                                                                Second things steps...
 
In a bowl, mix cream cheese, salt and pepper and herbs. Beat with mixer on medium speed until good and creamy.

Use a 2 1/2″ cookie/biscuit cutter and cut out 30 rounds from bread. Then with a rolling pin, roll each round so it’s about 1/8 inch thick. For each roll, spread about 1 teaspoon of the cream cheese mixture in the middle and to within 1/4 inch of the sides. Sprinkle a bit of paprika in the center. Roll the bottom of the round over and pinch to seal. It will look like a calla lily.

Wash, peel and cut carrots into very thin matchsticks or use Orange bell pepper. Cut 2-inch pieces and stick a carrot/pepper into the center of each rolled sandwich. This looks like the stamen.

Then stick the blade ends of the green onions in the pinched end.

Alcoholic Kiwi Margarita Freezer Pops

So onto the recipe...

 

First things first

2 cups margarita mixer
4 whole kiwi peeled and chopped
1 whole lime thin sliced
2 tbsp sea salt
1 bunch yogurt containers
1 bunch popsicle sticks



 



                                                                                                                                                                Second things steps...
 
1.  In a blender, puree margarita mixer and kiwi’s together. Pour puree into prepared yogurt containers.

2. With a knife, slice a thin strip in the center of four lime slices, then press a wooden ice-cream spoon halfway through the center of each lime slice.

3. Gently set a lime slice on top of the puree in each yogurt container, so half the wooden spoon is sticking inside the puree, and the other half is sticking out of the yogurt container.

4. Sprinkle the top of the lime with coarse salt.

5. Transfer carefully to a freezer, freeze until firm, about 3-5 hours. Remove from yogurt containers to serve.

Biscuit & Egg Pizza

So onto the recipe...

 

First things first

1 cup flour
1 1/2 tsp baking powder
1/4 tsp salt
4 tbsp butter
6 tbsp milk
1 tsp vinegar
1/2 cup salsa
1 cup shredded cheese
4 whole eggs
1/4 cup cilantro
1 dash salt and pepper

 1. Get biscuit cutters out

2. Preheat oven to 350 degrees.

3. In a mixing bowl, stir together flour, baking powder, and salt. Use a fork to cut the butter into the flour mixture.

4. In a small bowl, whisk together milk and vinegar, allow to curdle for 1 minutes. Then, pour milk mixture into flour mixture, stirring just enough times to make the dough start following the fork around the bowl—about 6-8 stirs.

5. Dump dough onto a parchment-lined work area. Knead 4-5 times, then flatten dough to about 1 inch thick. Cut with a large biscuit cutter. Transfer cut biscuits to a parchment-lined baking sheet.

6. Press down flat, until about 1/2” thick, forming a small well in the center of the biscuit (this will keep the egg from running off the edges of the biscuits).

7. Spread 2 tablespoons of picante sauce atop each biscuit. Sprinkle 1/4 cup of shredded cheese on top of each biscuit, then crack an egg on top of each pizza.

8. Sprinkle with salt and pepper. Bake for 15-20 minutes, or just until the edges of the biscuits are golden brown, the egg whites are firm, and the egg yolks are soft cooked.

10. Remove from the oven. Cool for 5 minutes before serving.

Top Dog Kansas City Style

First things first

1 whole hot dog
1 whole hot dog bun
1 slice swiss cheese
1 tbsp sauerkraut 






 



                                                                                                                                                                Second things steps...
 
Microwave hot dog on a microwave-safe plate for 45 seconds, or until hot.

Split open the bun and top with cheese slice. Place hot dog in the center, and add sauerkraut

Turkey Mushroom Burger

So onto the recipe...

 

First things first

3 oz ground turkey
1/4 cup chopped mushrooms
1 slice bread
3 tbsp chopped onion
1 tbsp egg substitute
1/2 tbsp parsley
1/2 tbsp ketchup
1/4 tsp minced garlic
1 dash salt and pepper
 


 

                                                                                                                                                                Second things steps...
 
 Place the half-slice of bread in a blender or food processor, and pulse until you have soft, fluffy breadcrumbs.

In a medium bowl, combine breadcrumbs with all other ingredients and knead by hand until integrated. Form into a nice, big patty about 3/4 of an inch thick.

Bring a pan misted with nonstick spray to medium heat on the stove. (Use a grill pan if you've got it.) Place patty in the pan, cover, and cook for 5 - 7 minutes. Very carefully flip the patty, re-cover the pan, and cook for another 5 - 7 minutes, until patty is cooked through.

Outside In Cheeseburger

So onto the recipe...

 

First things first

4 ounce ground beef
1 piece swiss cheese
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp Worcestershire sauce
1 dash salt and pepper


 


                                                                                                                                                                Second things steps...
 
In a medium bowl, combine all ingredients except the cheese. Add as much salt and pepper as you like. Knead mixture by hand until integrated. Form into a ball and, using your thumb, make a large, hollow indentation in the ball (past the center but not all the way through). Fill the hole with cheese and squeeze the meat to seal, making sure no cheese is exposed. Flatten slightly into a thick patty.

Bring a pan misted with nonstick spray to medium-high heat on the stove. (Use a grill pan if you've got one.) Place patty in the pan, cover, and cook for 4 - 7 minutes per side, depending on how well done you like your burger.
 
 Heads Up: Don't press on the patty with your spatula (your burger might ooze cheese!).
