Sugar Cookie Bars

I can hear you already going what on earth is that?????





Well.....If words like “Bars” make you think, “Ew, weird, clicking away now." Don’t–click away!




Avoiding things that sound weird will keep you from enjoying things that taste amazing.





So onto the recipe...

 

First things first




Ingredients:


1 cup butter
2 cups sugar
4 whole eggs
2 tsp vanilla
1 tsp lemon juice
5 cups flour
1 tsp salt
1/2 tsp baking soda

Frosting:
1 cup butter
1 tsp vanilla
4 cups powdered sugar
5 tbsp milk
1 box food coloring

To make the cookies, preheat the oven to 350˚ F.   Grease a 13 x 18″ rimmed baking sheet (mine was 12 x 17″).  Combine the butter and sugar in the bowl of an electric mixer.  Beat on medium-high speed until light and smooth, about 2 minutes.  Mix in the eggs one at a time, beating well after each addition and scraping down the sides of the bowl as needed.  Blend in the vanilla, seeds from the vanilla bean, and lemon zest.  In a medium bowl, combine the flour, salt and baking soda.  Stir together with a fork to blend.  Add the dry ingredients to the mixer bowl and beat on low speed just until incorporated.
Transfer the cookie dough to the prepared baking sheet and press into an even layer.  Bake 10-15 minutes, until light golden brown and a toothpick inserted in the center comes out clean.  Transfer the pan to a wire rack and let cool completely before frosting.
To make the frosting, place the butter in the bowl of an electric mixer.  Beat on medium-high speed until smooth, about 1 minute.  Blend in the vanilla, salt, and confectioners’ sugar until smooth, 1-2 minutes.  Mix in the milk.  Tint as desired with food coloring.  Spread over the cookie in the pan, cut into bars and serve.

Strawberry Cream Bars

So onto the recipe...

 

First things first




Ingredients:



Crust:
1 pkg sugar cookie mix
1/2 cup butter
1 whole egg

Filling:
1 cup white chocolate chips
8 ounces cream cheese

Topping:
5 cups strawberries sliced
1 cup sugar
2 tbsp cornstarch
1/2 cup water
12 drops red food color

 







                                                                                                                                                                Second things steps...
Heat oven to 350°F. Spray bottom only of 15x10x1- or 13x9-inch pan with cooking spray. In large bowl, stir cookie mix, butter and egg until soft dough forms. Press evenly in bottom of pan. Bake 15 to 20 minutes or until light golden brown. Cool completely, about 30 minutes.
2 In small microwavable bowl, microwave baking chips uncovered on High 45 to 60 seconds or until chips are melted and can be stirred smooth. In medium bowl, beat cream cheese with electric mixer on medium speed until smooth. Stir in melted chips until blended. Spread mixture over crust. Refrigerate while making topping.
In small bowl, crush 1 cup of the strawberries. In 2-quart saucepan, mix sugar and cornstarch. Stir in crushed strawberries and 1/3 cup water. Cook over medium heat, stirring constantly, until mixture boils and thickens. Stir in food color. Cool 10 minutes. Gently stir in remaining 3 cups strawberries. Spoon topping over filling. Refrigerate 1 hour or until set; serve within 4 hours. Store covered in refrigerator.

Snickerdoodle Bars

First things first




Ingredients:


2 sticks butter
1 cup brown sugar
1/2 cup sugar
1/2 tsp baking soda
1/2 tsp cinnamon
1/2 tsp salt
2 whole eggs
1 tsp vanilla
2  1/4 cup flour
1 tsp cinnamon sugar


 






                                                                                                                                                                Second things steps...
Preheat oven to 350°. Take out a nonstick 13-by-9-inch metal baking pan and set aside.
Cream butter and sugars with an electric mixer at high speed until fluffy. Add baking soda, cinnamon and salt, then mix at low speed to blend. Add eggs and vanilla extract and beat at medium until just incorporated. Add flour and mix on low speed until blended.
Scrape dough into pan, smoothing it in an even layer. Bake until lightly golden and set in center, about 30 minutes.
Transfer pan to a rack, and if desired, sprinkle cinnamon-sugar over warm bars, and then let cool completely. Or dust cooled bars with confectioners' sugar. Cut into 40 bars.

Red Velvet Bars

First things first




Ingredients:


24 whole crumbled oreo cookies
1/4 cup butter
6 squares baking chocolate
24 ounce cream cheese
1 cup sugar
1 tsp vanilla
3 whole eggs
1 tbsp red food color

  HEAT oven to 350ºF.
MIX cookie crumbs and butter; press onto bottom of 13x9-inch pan sprayed with cooking spray.
MELT 4 chocolate squares as directed on package; place in medium bowl. Set aside. Beat cream cheese, sugar and vanilla with mixer until well blended. Add eggs; beat just until blended. Remove 2 cups batter; mix with melted chocolate and food coloring. Carefully spread over crust; cover with remaining plain batter.
BAKE 26 to 28 min. or until center is almost set. Cool completely. Melt remaining chocolate; drizzle over dessert. Refrigerate 4 hours.

Raspberry Streusel Bars

First things first



Ingredients:



1 pkg sugar cookie mix
1/3 cup butter
2 tbsp flour
1 tsp almond extract
1 whole egg
1 cup raspberry jam

    1 Heat oven to 350°F. Spray bottom of 8-inch square pan with cooking spray.
    2 In large bowl, stir cookie mix, butter, flour, almond extract and egg until dough forms. Press half of dough into bottom of pan; bake 15 minutes. Spread jam over base. Crumble remaining dough over jam.
 3 Bake 20 to 25 minutes or until golden brown. Cool completely, about 2 hours. For bars, cut into 5 rows by 5 rows.

First things first



Ingredients:


2  1/2 cups flour
1  2/3 cups sugar
3/4 cup butter
1/3 cup milk
2 whole eggs
15 ounce canned pumpkin
1  1/4 tsp baking powder
1  1/4 tsp baking soda
1 tsp cinnamon
1 tsp pumpkin pie spice
1/2 tsp cloves

 








                                                                                                                                                                Second things steps...
Heat oven to 350°F. Combine all bar ingredients in large bowl. Beat at medium speed, scraping bowl often, until well mixed.
Pour batter into greased 15x10x1-inch jelly-roll pan. Bake for 25 to 35 minutes or until bar springs back when touched lightly in center. Cool completely.
Place paper doily over cooled pumpkin bars; sprinkle bars with powdered sugar. Carefully remove doily.
*Substitute 1/2 teaspoon ground cinnamon, 1/4 teaspoon ground ginger, 1/8 teaspoon ground nutmeg and 1/8 teaspoon ground cloves. .

Peppermint Fudge Bars

First things first



Ingredients:


16 whole york patties
1 1/2 cups crushed vanilla wafers
1/2 cup cocoa powder
1/2 cup powdered sugar
1/4 cup butter
14 ounce can sweet milk
1/4 cup flour
1 whole egg
1 tsp vanilla
1/2 tsp baking powder
1 tbsp powdered sugar
1/2 tsp water












                                                                                                                                                                Second things steps...
Heat oven to 350°F. Unwrap and coarsely chop peppermint patties; set aside. Stir together cookie crumbs, 1/4 cup cocoa, 1/2 cup powdered sugar and melted butter. Press firmly on bottom of ungreased 13x9x2-inch baking pan.
2. Beat sweetened condensed milk, flour, remaining 1/4 cup cocoa, egg, vanilla and baking powder in large bowl until well blended. Spread evenly over prepared crust. Set aside 2 tablespoons peppermint pattie pieces; sprinkle remaining pieces over filling.
3. Bake 18 to 23 minutes or until set. Cool completely in pan on wire rack. Sprinkle cooled bars with additional powdered sugar.
4. Place reserved peppermint patties and water in small microwave-safe bowl. Microwave at MEDIUM (50%) 30 seconds; stir. If necessary, microwave an additional 10 seconds at a time, stirring after each heating, until patties are melted and smooth when stirred. Immediately drizzle over bars. Allow drizzle to set. Cut into bars.

Peanut Butter Bars

First things first



Ingredients:


1/4 cup butter
1/2 tsp sugar
2 whole eggs
1 tbsp lemon juice
2 cups flour
2 tsp cinnamon
2 cups peanut butter










                                                                                                                                                                Second things steps...

Cream margarine. Add sugar, eggs and
lemon  Mix well. Add flour and cinnamon.
Mix well. Add peanut butter  and stir.

Shape into bars 1-inch x 1-1/2-inch x 1-inch thick. Pat
firmly.Cover with waxed paper and allow to dry overnight.

Heat oven to 375 degrees F.
Bake the bars 12 to 15 minutes. Let cool.

Peanut Butter & Jelly Bars

First things first



Ingredients:


 1 cup flour
1 cup brown suga
1/2 cup peanut butter
1/2 cup butter
1 cup jelly any kind
1 whole egg
1 tsp baking powder
1/2 tsp salt
1 tsp vanilla

Do not preheat your oven.
By hand or with a mixer, cream together sugar, peanut butter, and butter. Stir in the egg and vanilla.
In a seperate bowl or large plastic ziplock bag, mix together the flour, salt, and baking powder.
Add the dry ingredients to the wet ingredients slowly, mixing thoroughly, until a thick dough forms.
Press 3/4 of the peanut butter dough into the bottom of a parchment paper-lined 9×13 baking dish. Place the dish in the fridge to chill for at least an hour, but no more than 1 day, allowing the butter to re-solidify. Place the other 1/4 of peanut butter dough in the freezer until ready to use, this will make it easier to crumble over the top of the bars before baking.
When ready to bake, heat the strawberry jam in the microwave for 30 seconds, or until the jam is slightly more liquid. Spread it evenly over the peanut butter dough in the pan.
Remove the rest of the peanut butter dough from the freezer and crumble it over the jam-covered dough in the pan.
Bake in a non-preheated oven at 350 degrees for approximately 20 minutes, or until the top crust is golden brown and the jam is bubbly.
Allow the bars to cool before attempting to slice, or you may have a sticky yet delicious mess on your hands.

Ingredients:



Crust:
1/2 cup butter
1/4 cup powdered sugar
1 cup flour
1/8 tsp salt

Filling:
1 tbsp orange zest
1 cup sugar
1 tbsp orange extract
3 tbsp orange juice
3 tbsp flour
1/2 tsp baking powder
2 whole eggs








                                                                                                                                                                Second things steps...

  Preheat oven to 350 degrees. Grease an 8x8" pan thoroughly.
- In the bowl of an electric mixer, beat together butter and powdered sugar on medium speed until light and fluffy.
- In another bowl, whisk together flour and salt
- Turn the mixer down to low and slowly add the flour and salt. Mix until well combined.
- Press the dough into the prepared pan and bake for 10 minutes.
- While the dough is baking, prepare the filling by simply mixing all of the ingredients together until well combined.
- Bake for 20 minutes, or until the edges of the filling are slightly golden brown.

Oatmeal Cranberry Bars

First things first



Ingredients:


1 bag oatmeal cookie mix
1/4 tsp cinnamon
1/2 cup butter
1 whole egg
3/4 cup sour cream
3 tbsp sugar
2 tsp lemon juice
1/4 tsp vanila
1 whole egg yolk
1 cup dried cranberries





                                                                                                                                                                Second things steps...

    1 Heat oven to 350°F. Line 9-inch square pan with foil, leaving 1 inch of foil extending up over sides of pan. Spray foil-lined pan with cooking spray.
    2 In large bowl, stir cookie mix, cinnamon, butter and egg until stiff dough forms. Reserve 1/4 of the dough. Press remaining dough in bottom of foil-lined pan. Bake 15 minutes.
    3 In small bowl, stir sour cream, sugar, lemon peel, vanilla and egg yolk until well blended. Stir in cranberries. Spread over crust. take  reserved oatmeal dough; and crumble over cranberry mixture.
    4 Bake 18 to 20 minutes or until top is light brown. Cool 30 minutes. Refrigerate 2 hours. For bars, cut into 4 rows by 4 rows. Store covered in refrigerator.

Blackberry Almond Oatmeal Bars

So onto the recipe...

 

First things first



Ingredients:


1 1/2 cups flour
1 1/2 cups oats
1 cup brown sugar
1 tps baking powder
1/8 tsp salt
1/2 cup butter
6 tbsp butter
1/2 cup sliced almonds
1 jar blackberry preserves
6 ounces blackberries






                                                                                                                                                                    Second things steps...

Heat oven to 350°F. Grease 13x9-inch (3-quart) glass baking dish with butter or cooking spray.
2 In large bowl, mix flour, oats, brown sugar, baking powder and salt. Work in butter pieces with fingers until mixture looks like coarse meal. Stir in almonds. Press half of the mixture in bottom of baking dish. Top with fruit spread and blackberries. Sprinkle remaining oat mixture over top; pat down lightly.
3 Bake 32 to 35 minutes or until golden brown. Cool on cooling rack at least 45 minutes. Cut into 6 rows by 4 rows.

Ingredients:


1 1/2 sticks butter
1 tbsp syrup
1 tsp baking soda
1/2 tsp allspice
2 cups oats
1 cup flour
1 cup sugar








                                                                                                                                                                   Second things steps...

   1. Preheat oven to 350 degrees F. Coat a 9" x 13" baking dish with nonstick cooking spray.
      
   2. Melt butter and syrup over low heat on stovetop or in microwave.
      
   3. In a large bowl, combine butter mixture, baking soda, and allspice; mix well and let cool.
      
   4. Add rolled oats, flour, sugar. Press dough into baking dish.
      
   5. Bake 15 minutes. Immediately cut into bars; let cool completely then cut again

Mint Chocolate & Cookie Bars

First things first



Ingredients:


2 cups chocolate chips
1/2 cup butter
1 1/2 cups crushed graham crackers
14 ounce can sweet milk
1 cup chopped cashews
1 cup creme de menthe chips





                                                                                                                                                                    Second things steps...
 Preheat oven to 350°F (325°F for glass dish). In 13" x 9" baking pan, melt butter in oven. Sprinkle crumbs over butter; pour sweetened condensed milk evenly over crumbs. Top with remaining ingredients; press down firmly with fork. Bake 25 minutes or until lightly browned.
Cool. Chill if desired. Cut into bars. Store covered at room temperature.
Sprinkle extra chocolate chips over tops

Mint Cheesecake Bars

First things first



Ingredients:



Crust:
1/3 cup butter
1 cup crushed chocolate graham crackers

Filling:
1/2 cup sugar
16 ounces cream cheese
2 whole eggs
3/4 tsp peppermint extract
2 drops green food color

Glaze:
1/2 cup chocolate chips
1/2 tsp butter flavored shortening




















Second things steps...

Heat oven to 350°F. Melt butter in 8-inch square baking pan in oven (4 to 6 minutes). Stir in crushed graham crackers. Press crumb mixture evenly onto bottom of pan. Set aside.

Combine all filling ingredients in small bowl. Beat at medium speed, scraping bowl often, until smooth. Spread filling over crust. Bake for 35 to 40 minutes or until filling is set. Cool completely.

Melt chocolate chips and shortening in 1-quart saucepan over low heat, stirring constantly, until smooth (2 to 3 minutes). Drizzle over cooled bars; refrigerate until firm. Cut into bars. Store refrigerated.

Marbled Banana Bars

First things first



Ingredients:


1 cup sugar
1/2 cup butter
4 whole bananas mashed
1 whole egg
1 tsp vanilla
1 1/2 cups flour
1 tsp baking powder
1 tsp baking soda
1/4 cup cocoa


















Second things steps...
Heat oven to 350°F. Combine sugar and margarine in large bowl. Beat at medium speed, scraping bowl often, until creamy. Add bananas, egg and vanilla; continue beating, scraping bowl often, until well mixed. Reduce speed to low; add flour, baking powder, baking soda and salt. Beat, scraping bowl often, until well mixed.

Drop 1 1/2 cups batter by spoonfuls into greased 13x9-inch baking pan. To remaining batter in bowl, add cocoa; beat at low speed until well mixed.

Drop spoonfuls of chocolate batter in pan over banana batter. Gently swirl chocolate batter through banana batter using knife. Bake for 20 to 25 minutes or until toothpick inserted in center comes out clean. Cool completely.

Just before serving, sprinkle with powdered sugar. Cut into bars.

Mango Bars

So onto the recipe...

 

First things first



Ingredients:


 2 1/3 cups flour
1/2 cup macadamia nuts
1 cup powdered sugar
1/8 tsp salt
1 cup butter
1 whole mango peeled and diced
1/2 cup orange marmelade
1/2 cup sugar
4 whole eggs
1 tsp lemon juice


















Second things steps...
 Place nuts in a food processor; cover and process until finely chopped. Add 2 cups flour, confectioners' sugar and salt; cover and process until blended. Add butter; pulse just until mixture is crumbly. Press into an ungreased 13-in. x 9-in. baking pan. Bake at 350° for 15-20 minutes or until lightly browned.
In a clean food processor, combine mango and orange marmalade; cover and process until smooth. Add sugar and remaining flour; process until combined. Add eggs and lemon peel; process just until combined. Pour over crust.
Bake for 23-28 minutes or until golden brown around the edges. Cool on a wire rack. Cut into bars. Refrigerate leftovers

First things first



Ingredients:



Crust:
4 tbsp butter
2/3 cup shelled pistachios
4 ounces crushed graham crackers
1/4 cup sugar
1 tbsp lime juice

Filling:
2 whole egg yolks
14 ounce can milk
1/2 cup lime juice


















Second things steps...
    Preheat oven to 350 degrees. Brush an 8-inch square baking dish with melted butter. Line bottom with parchment paper, leaving a 2-inch overhang on two sides.
    In a food processor, finely grind pistachios with graham-cracker crumbs, sugar, and zest. Blend in butter. Press mixture into bottom and 1 inch up sides of prepared pan. Bake until lightly browned, 8 to 12 minutes. Cool crust, 30 minutes.
    To make the filling: In a large bowl, whisk together egg yolks and condensed milk. Add lime juice; whisk until smooth. Pour filling into cooled crust; carefully spread to edges.
    Bake until set, about 15 minutes. Cool in pan on rack; then chill at least 1 hour before serving. Using parchment paper overhang, lift out of pan, and transfer to a cutting board. With a serrated knife, cut into 16 squares, wiping knife with a damp kitchen towel between each cut.

Lemonade Graham Bars

First things first



Ingredients:


12 whole graham crackers crushed
1/3 cup butter
4 cups frozen vanilla yogurt
6 ounces frozen lemonade
1 cup cool whip
















Second things steps...

MIX graham crumbs and margarine; press onto bottom of 9-inch square pan.
BEAT yogurt and concentrate with mixer until blended; spread over crust.
FREEZE 4 hours or until firm. Serve topped with COOL WHIP.

Ingredients:



Shortbread :
3/4 cup butter
1 1/2 cups flour
1/2 cup powdered sugar


Filling:
2 whole lemons
4 whole eggs
1 1/2 cup sugar
1/4 cup flour














Second things steps...
Heat the oven to 350 degrees. For the shortbread crust, have your child use her fingertips to work the butter, flour, and confectioners' sugar in a large bowl until the mixture holds together. Transfer the dough to an ungreased 9- by 13-inch pan and press it into the pan. Bake for 20 minutes or until the edges begin to brown.While the shortbread is baking, make the lemon filling. Wash and dry the lemons, then grate the rinds using the small holes on your grater (you will need 2 tablespoons of zest). Slice each lemon in half and squeeze the juice into a measuring cup until you have 1/3 cup. Remove any seeds. (Tip: To grate a lemon, your child should hold the grater firmly with one hand and grip the lemon with the other, keeping the fingers as far away from the grater as possible.)
In a large mixing bowl, whisk together the eggs and sugar. Whisk in the flour. Stir in the lemon zest and juice. When the shortbread has baked, pour the filling over it and return the pan to the oven for another 20 to 25 minutes or until the filling no longer jiggles and the edges are lightly brown. (Test by inserting a knife in the middle.) Cool and dust with confectioners' sugar. Makes 24 two-inch lemon squares. Refrigerate any leftovers.

Lemon Raspberry Cream Bars

First things first



Ingredients:


1 box yellow cake mix
1/2 cup butter
2 whole eggs
1 cup raspberry jam
8 ounces cream cheese
2 tbsp milk
12 ounces white chocolate squares
3 tbsp powdered sugar















Second things steps...
       1 Heat oven 350°F (325°F for dark or nonstick pan). Grease bottom only of 15x10x1-inch pan.
    2 In large bowl, mix cake mix, butter and eggs with spoon until well blended. With floured fingers, press evenly in pan.
    3 Bake 14 to 18 minutes or until light golden brown and toothpick inserted in center comes out clean. Cool 5 minutes. Spread evenly with preserves. Cool 30 minutes.
    4 In medium bowl, beat cream cheese and milk with electric mixer on medium speed until smooth; set aside.
    5 In 1-quart saucepan, melt white chocolate over low heat, stirring frequently. Add warm melted white chocolate to cream cheese mixture; beat on medium speed until creamy (mixture may look slightly curdled). Carefully spread over preserves. Refrigerate about 1 hour or until set.
    6 Sprinkle powdered sugar over top. For bars, cut into 8 rows by 6 rows. Store covered in refrigerator.

Ingredients:


1 cup flour
1/2 cup powdered sugar
1/2 cup butter
1/4 cup macadamia nuts

Filling Ingredients:
1 cup sugar
2 tbsp flour
1/2 tsp baking powder
1/8 tsp salt
2 whole eggs
2 tbsp lemon juice
1 tsp grated lemon peel
2 tbsp macadamia nuts
1 cup powdered sugar













Second things steps...
    In a large bowl, combine the flour, confectioners' sugar and butter until crumbly; stir in nuts.
    Press onto the bottom and 1/2 in. up the sides of a greased 8-in. square baking dish. Bake at 350° for 15-20 minutes or until lightly browned.
    In a small bowl, combine the sugar, flour, baking powder and salt. Beat in the eggs, lemon juice and lemon peel until light and fluffy.
    Pour over hot crust. Sprinkle with nuts. Bake for 10-15 minutes or until lightly browned. Cool completely on a wire rack. Cut into bars. Sprinkle with the confectioners' sugar. Yield: 1 dozen.

Lemon Lime Bars

So onto the recipe...

 

First things first



Ingredients:


1/2 cup butter
1/4 cup powdered sugar
1 cup flour
1/8 tsp salt

Lime Filling:
1 tsp lime zest
1/2 cup sugar
2 tbsp lime juice
2 tbsp flour
1/4 tsp baking powder
1 whole egg
1 jar green food color

Lemon Filling:
1 tsp lemon zest
1/2 cup sugar
2 tbsp lemon juice
2 tbsp flour
1/4 tsp baking powder
1 whole egg














Second things steps...
Preheat oven to 350 degrees. Grease the pan (either an 8x8 Pyrex, or individual tins like this)
- With an electric mixer, beat together butter and powdered sugar on medium speed until creamy. Turn the mixer down to low and slowly add the flour and salt. Mix until well combined.
- Press the dough into the pan and bake for 10 minutes
- While the dough is baking, prepare the fillings: in one bowl, mix together the ingredients for the lime filling and in another bowl, mix together the ingredients for the lemon filling. (If you're just going to use an 8x8 Pyrex, go ahead and just mix everything together in 1 bowl)
- To recreate my 2 color look, put the tip of a spatula diagonal in the square cavity and spoon in about 1-1/2 tbsp of the lime on one side of the spatula and 1-1/2 tbsp of lemon on the other. (For the pyrex, just pour it all in)
- Bake for 15 minutes if you're using the mini tins and 20 minutes for the 8x8 Pyrex, or until the filling is slightly golden brown

First things first



Ingredients:


1 box yellow cake mix
1/4 cup butter
3 whole eggs
8 ounce cream cheese
1 cup powdered sugar
2 tbsp lemon juice
2 tsp grated lemon peel




















Second things steps...
Heat oven to 350°F (325°F for dark or nonstick pan). In large bowl, beat dry cake mix, butter and 1 of the eggs with electric mixer on low speed until crumbly. Press in bottom of ungreased 13x9-inch pan.In medium bowl, beat cream cheese with electric mixer on medium speed until smooth. Gradually beat in powdered sugar on low speed. Stir in lemon peel and lemon juice until smooth. Reserve 1/2 cup; refrigerate. Beat remaining 2 eggs into remaining cream cheese mixture on medium speed until blended. Spread over cake mixture. Bake bars 23 to 28 minutes or until set. Cool completely, about 1 hour. Spread with reserved cream cheese mixture. Refrigerate about 3 hours or until firm. For bars, cut into 8 rows by 6 rows. Store covered in refrigerator.

Ingredients:


1 1/4 cups flour
1 cup sugar
1 1/2 tsp baking powder
1 whole egg
2 tsp lemon juice
1/4 cup butter
3/4 cup milk

Glaze Ingredients:
3/4 cup powdered sugar
1 tbsp butter
3 tsp lemon juice


















Second things steps...
Heat oven to 350°F. Combine flour, sugar, baking powder and salt in lightly greased 8-inch square baking pan. Make 2 indentations in flour mixture. Set aside.

Combine egg and lemon zest in small bowl with fork; pour into 1 indentation. Pour 1/4 cup melted margarine in other indentation. Pour milk over all; mix well. (Some lumps will remain.)

Bake for 30 to 35 minutes or until toothpick inserted in center comes out clean. Cool completely.

Combine powdered sugar, 1 tablespoon melted margarine and enough lemon juice for desired glazing consistency in small bowl. Spread glaze over cooled cake.

Key Lime Bars

First things first



Ingredients:




Crust Ingredients:
8 tbsp butter
1/4 cup sugar
1 cup flour
1/4 tsp salt

Filling Ingredients:
2 whole eggs
1 whole egg yolk
1 cup sugar
1/3 cup key lime juice
1 tsp lime zest
2 tbsp flour
3 tbsp powdered sugar

















Second things steps...
Preheat oven to 350°F. Line an 8-inch square baking pan with foil, leaving an overhang. Mist foil with cooking spray.
Make crust: Using an electric mixer on medium-high speed, beat butter and sugar until light, about 2 minutes. Beat in flour and salt. Press evenly over bottom of pan. Bake until firm and light golden around edges, 20 to 25 minutes. Cool slightly.
Make filling: Using an electric mixer on medium speed, beat eggs, yolk and sugar until smooth. Stir in lime juice and zest. Fold in flour. Pour filling over crust and bake until set, 20 to 30 minutes. Cool on a wire rack. Cover and refrigerate for at least 1 hour or overnight. Use foil overhang to remove bars from pan to cut. Dust with confectioners' sugar just before serving, if desired.

Peanut Butter Cranberry Granola Bars

So onto the recipe...

 

First things first



Ingredients:


1 cup brown sugar
1 cup honey
1 1/2 cups peanut butter
1 tsp cinnamon
5 cups bran cereal
6 ounces dried cranberries















Second things steps...
Line a 9 x 9 x 2-inch baking pan with foil; set aside. In a large saucepan, stir together brown sugar and honey. Bring to a boil, stirring constantly. Remove from heat. Stir in peanut butter and cinnamon until smooth. Stir in cereal and 1/2 cup cranberries until coated.
Pat mixture into prepared pan, pressing firmly. Press remaining cranberries on top. Cover and chill until set or up to 24 hours.
To serve, use foil to lift mixture from pan; cut into squares. Will keep in the refrigerator for three days.
