Asparagus & Soft Eggs On Toast
I can hear you already going what on earth is that?????
Well.....If words like “asparagus on toast” make you think, “Ew, weird, clicking away now,” don’t–click away
Avoiding things that sound weird will keep you from enjoying things that taste amazing.
So onto the recipe.....
First things first
Ingredients:
1. 4 slices bread
2. 1 pound asparagus spears trimmed and cut
3. 2 tablespoons olive oil
4. 1 teaspoon salt
5. 1 teaspoon black pepper
6. 8 whole eggs
7. 1/4 cube parmesan cheese
Second things steps...
1. Preheat broiler.
2. Place the bread and asparagus on a baking sheet.
3. Drizzle with the oil and season with 1/2 teaspoon each salt and pepper.
4. Broil until the bread is toasted, 1 to 2 minutes per side; transfer the bread to plates.
5. Continue broiling the asparagus, tossing once, until tender, 4 to 8 minutes more.
6. Meanwhile, bring a large saucepan of water to a boil.
7. Carefully lower the eggs into the water.
8. Reduce heat and gently simmer for 6 minutes.
9. Cool under running water and peel.
10. Divide the asparagus among the toast, sprinkle on the Parmesan, and top with the eggs.
