Chocolate Covered Coconut Balls
I can hear you already going what on earth is that?????
Well.....If words like “balls” make you think, “Ew, weird, clicking away now,” don’t–click away
Avoiding things that sound weird will keep you from enjoying things that taste amazing.
So onto the recipe.....
First things first
Ingredients:
1. 6 squares of chocolate baking bars
2. 1/4 cup butter melted
3. 1/2 cup sweet milk
4. 1 cup sugar
5. 1/4 cup water
6. 1 tablespoons corn syrup
7. 1 teaspoon vanilla
8. 2 cups coconut flakes
9. 1 tablespoon powdered sugar
Second things steps...
1. Melt chocolate and butter in large heavy saucepan over very low heat.
2. Add sweetened condensed milk; stir to blend.
3. Remove from heat.
4 Combine granulated sugar, water and corn syrup in small saucepan.
5. Cook over medium heat, stirring constantly, until sugar is dissolved.
6. Cook, without stirring, until mixture reaches 250°F on candy thermometer
7. Remove from heat; stir into chocolate mixture.
8. Add vanilla, coconut; stir until well blended.
9. Refrigerate about 30 minutes or until firm enough to handle.
10. Shape into 1-inch balls; roll in powdered sugar.
11. Store tightly covered in cool, dry place.
About 4 dozen candies.
Note: For best results, do not double this recipe. Feel free too add in nuts in step 8.
Now simple disclosure I will on occasion borrow pictures from other sites if I did not take one and I apologize...The above picture came from www.hdconnelly.wordpress.com
Enjoy !!
