 Asparagus With Hollandise Sauce



I can hear you already going what on earth is that?????




Well.....If words like “hollandise” make you think, “Ew, weird, clicking away now,” don’t–click away

Avoiding things that sound weird will keep you from enjoying things that taste amazing.



So onto the recipe.....




First things first
 Ingredients:
1. 2 pounds asparagus spears trimmed and cut

2. 1 batch hollandaise (see below or recipe)





Second things steps...
Ingredients
1. Fill a large roasting pan 1/2 inch high with water.

2.  Place asparagus in an even layer in roasting pan; bring to a boil over medium-high heat. 
3. Cook, turning, until asparagus are crisp-tender, about 6 minutes. 
4. Drain asparagus and serve with hollandaise sauce


Hollandaise Sauce

Ingredients
 1. 2 large egg yolks
 2. 1 tablespoon warm water
 3. 1 tablespoon fresh lemon juice
 4. 3/4 teaspoon coarse salt
 5. 1/2 cup (1 stick) unsalted butter


 



Directions
 1. In a blender, combine egg yolks, water, lemon juice, and salt; blend until frothy.
 2. Heat butter in the microwave or in a small saucepan over medium until bubbly 

(do not let brown) 
3. With blender running, pour in hot butter in a very thin stream, 
4. Blend until sauce is thick and emulsified.
