Polenta, Mozzarella, Onion & Prosciutto Balls
I can hear you already going what on earth is that?????
Well.....If words like “polenta” make you think, “Ew, weird, clicking away now,” don’t–click away
Avoiding things that sound weird will keep you from enjoying things that taste amazing.
So onto the recipe.....
First things first
Ingredients:
1. 2 cups chicken broth
2. 2 cups milk
3. 1 cup instant polenta
4. 1/2 cup parmesan cheese
5. 1/2 cup onion diced
6. 1/2 tablespoon butter
7. 1/3 cup brown sugar
8. 8 ounces mozzarella cheese
9. 1/4 pound prosciutto
Second things steps...
1) Bring the chicken broth and milk to a boil in a large saucepan.
2. Whisk polenta in to the liquid and immediately turn down the heat to low.
3. Cook polenta for about 3 minutes, stirring it a bit.
4. Mix in parmesan cheese. Add in some salt and pepper, too.
5. Immediately pour polenta into 9 x 13 pan and let sit for about 3 hours to firm up.
6. Now, onto the toppings.
7. Caramelize your onions with 1/2 T butter and the brown sugar over medium heat.
8. Stir every now and then until onions are browned.
9. Cut rounds out of your polenta.
10. When the onions are done, layer them on top of the polenta rounds.
11. Then top with mozzarella followed by prosciutto.
6) Serve polenta bites warmed.
