Lemon Pasta With Asparagus



I can hear you already going what on earth is that?????




Well.....If words like “asparagus” make you think, “Ew, weird, clicking away now,” don’t–click away

Avoiding things that sound weird will keep you from enjoying things that taste amazing.








So onto the recipe.....





First things first
 Ingredients:
1. 3 pounds linguine pasta cooked and drained

2. 1 pound asparagus trimmed and cut
3. 5 tablespoons lemon juice
4. 1/4 cup of pine nuts 
5. 1 cup basil
6. 3 whole garlic cloves
7. 1 tablespoon olive oil
8. 1 teaspoon olive oil
9. 1 cup fresh arugula leaves
10. 1/4 cup cold water
11. 1 whole lemon cut into wedges
12. 1 teaspoon salt
13. 1 teaspoon black pepper





Second things steps...

1. Snap off and discard woody ends of asparagus. 
2. Snap asparagus tips off and set aside.
3. With the remaining part of the asparagus cut in half and steam until tender in boiling water 

4. Take off heat once tender.
5. In a pan, sauté asparagus tips and garlic in one teaspoon of olive oil 

6. Set aside
7. In another pan, toast pine nuts for a couple of minutes. 

8. Set aside
9. In a food processor, process steamed asparagus middles, 

10. Add in 1 tablespoon olive oil, basil and lemon juice until a smooth cream
11. Season with salt and pepper and more lemon to desired taste and set aside
12. Cook pasta according to instructions

13. Take 1/4 cup of boiling pasta water and set it aside before draining.
14. In a large bowl, add asparagus tips and garlic,pine nuts, lemon rind, and arugula

15. Add in asparagus cream and the pasta water.
16. Stir together until combined.
17. Add drained linguine to the bowl. 

18. Toss to combine.

Notes: Serve with crusty bread, lemon wedges, and vegan parmesan. For a lower fat version, use spray oil instead of olive oil when sautéing asparagus tips and garlic.
