Coconut Lime Balls
I can hear you already going what on earth is that?????
Well.....If words like “balls” make you think, “Ew, weird, clicking away now,” don’t–click away
Avoiding things that sound weird will keep you from enjoying things that taste amazing.
So onto the recipe.....
First things first
Ingredients:
1. 2/3 cups graham crackers crushed
2. 6 tablespooons sweet milk
3. 1 teaspoon key lime juice
4. 1 teaspoon vanilla
5. 1 cup coconut shredded
6. 2 cups powdered sugar
Second things steps...
1. Combine crumbs, sweetened condensed milk, rind, juice, and vanilla in a medium bowl.
2. Add 2/3 cup coconut, and beat with a mixer at medium speed for 1 minute or until not grainy.
3. Add sugar, 1/4 cup at a time, beating until well combined.
4. Cover and chill 20 minutes.
5. Shape crumb mixture into 24 balls, about 1 teaspoon each.
6. Place remaining 1/3 cup coconut in a shallow bowl; roll balls in coconut.
Note: Refrigerate balls in an airtight container for up to one day.
